Crabbie’s chicken stir-fry

Ingredients
- 500 g diced chicken
- 1 chopped onion
- 3 sliced peppers, ideally 1 yellow, 1 red & 1 green
- 100 ml Crabbie’s Original Alcoholic Ginger Beer
- 100 g roasted cashews
- 100 ml soy sauce
- Oil for frying
Method
- Heat the oil in the wok and add chicken, cook for 5 minutes
- Add the sliced peppers and onion to the wok and cook for a further 5 minutes
- Add the Crabbie’s and soy sauce
- Cook until this reduces into a thick sauce
- Serve with rice and top with roast cashews
