Crabbie's Ginger Gammon


For the Glaze

  • 2 tbsp runny honey
  • 50g light brown soft sugar
  • ½ tsp ground cinnamon
  • juice of 1 orange
  • 50ml Crabbie’s Ginger Beer

For the Gammon

  • 2KG Boneless Gammon Joint
  • 1 tbsp whole cloves
  • 1 tsp black peppercorns
  • 2 cinnamon sticks
  • 2 bay leaves
  • 1L Crabbie’s Ginger Beer
  • 2 oranges – cut into quarters

  • Pre – heat oven to 170°C / gas mark 3.
  • Push the cloves evenly all over the fat/rind of the gammon. This gives a nice flavour and an attractive finish.
  • Put the peppercorns, cinnamon sticks, bay leaves into a large roasting tray add the gammon to the tray and then pour over the ginger beer. Cover the tray with foil.
  • Bake in the oven for 1 hour
  • After 1 hour take the gammon out of the oven paint the glaze onto the gammon with a pastry brush and bake in the oven uncovered for a further 30-45 mins until golden brown and sticky
