Crabbie’s Ginger Gammon

Ingredients
For the Glaze
- 2 tbsp runny honey
- 50g light brown soft sugar
- ½ tsp ground cinnamon
- juice of 1 orange
- 50ml Crabbie’s Ginger Beer
For the Gammon
- 2KG Boneless Gammon Joint
- 1 tbsp whole cloves
- 1 tsp black peppercorns
- 2 cinnamon sticks
- 2 bay leaves
- 1L Crabbie’s Ginger Beer
- 2 oranges – cut into quarters
Method
test 1
- Pre – heat oven to 170°C / gas mark 3.
- Push the cloves evenly all over the fat/rind of the gammon. This gives a nice flavour and an attractive finish.
- Put the peppercorns, cinnamon sticks, bay leaves into a large roasting tray add the gammon to the tray and then pour over the ginger beer. Cover the tray with foil.
- Bake in the oven for 1 hour
- After 1 hour take the gammon out of the oven paint the glaze onto the gammon with a pastry brush and bake in the oven uncovered for a further 30-45 mins until golden brown and sticky
