Crabbie's Vegetable Kottu

Ingredients

  • 1-2 tbsp olive oil
  • 1 finely chopped onion
  • 1 large potato
  • 100g Paneer – cut into small cubes
  • ½ tsp garlic paste
  • ½ tsp curry powder
  • ½ tsp Turmeric
  • ½ tsp Chilli powder
  • 2 finely chopped medium tomatoes
  • 2 Carrots – peeled and cut into fine strips 150g – fine green beans – tops cut off and beans cut in half
  • 1/3 Spring Green cabbage – finely shredded
  • 100ml Crabbie’s ginger beer
  • 2tbsp fresh Coriander – roughly chopped

Method

  • Heat the olive oil in a frying pan over a medium heat, add the onion and garlic paste and fry until the onion is soft but not browned. Add the potato and paneer and stir until the paneer starts to brown.
  • Add the curry powder, turmeric, chilli powder, and stir well.
  • Add the tomato, carrots, green beans and cabbage and stir well. Fry over a gentle heat for 5 mins then add the Crabbie's ginger beer and stir well and cook for a further 5 - 10 mins stirring occasionally.
  • Sprinkle over the coriander and serve with wedges of lime.
