The Bonnington Distillery

The result of a multi-million-pound investment, The Bonnington Distillery was commissioned in 2019 and began production in March 2020 – with an estimated 2200 casks per year, making it the first single malt distillery in Leith, Edinburgh, for nearly 100 years.

To say the water we use in the distillation process is locally sourced would be something of an understatement. It is drawn from an ancient aquifer located 147m below the distillery.

The state-of-the-art distillery has unique Twin-Linked Receivers, which means the distillers can create two different spirit types from the same distillation. In addition, two enormous 30-tonne grain silos mean we use two tonnes of malted barley per mash. There is a single 2.5-tonne mash tun, six 10,000 litre fermentation vessels inside which the wort is fermented for at least 48 hours – and our two bespoke-made squat-neck stills are made by Speyside Copper Works.

Overseeing this hive of delicious industry is our young and innovative team of distillers led by master blender Kirstie McCallum -one of only a few female master blenders in the industry. Under Kirstie’s watchful eye, our team is led by Jamie Lockhart. Together they bring a blend of unique skills and a true passion for distilling only the best single malt whisky to this exciting Bonnington location.
